Need to try and make a sauce out of this below.. can someone help???

a little olive oil in a pan, add chopped onions and garlic, add those tomatoes crushing them in the pan - include the juices. Add some parsley, basil, oregano .. let it come to a boil then simmer for like an hour ... add salt as needed - you can taste it as its cooking to see what it needs as far as more seasoning - you can add crushed red pepper if you like it spicy! .. then put it over pasta and add grated cheese!

2 Tbsp olive oil
1/2 medium onion, finely chopped
2 Tbsp chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon dried basil or 2 Tbsp chopped fresh basil
Salt and freshly ground black pepper to taste

Heat olive oil in a large wide skillet on medium heat. Add the chopped onion, garlic and parsley. Add the tomatoes, including the juice and shredding them with your fingers if you are using canned whole tomatoes. Add the basil. Season with salt and pepper to taste. Bring to a low simmer, reduce the heat to low and cook, uncovered until thickened. The longer the better

you can put them quickly in a food processor or blender if they're too chunk for you.

Re: sauce recipes

1 giant can whole peeled tomatoes (or two smaller can)
1 can tomato paste
3 garlic cloves
a few tbsp olive oil
salt and pepper
oregano
parsley
basil

Put the tomatoes in a blender and liquefy them. Strain out the seeds.

Sautee garlic in a sauce pot just until you can smell it. Add liquefied tomatoes and bring to a boil.

In a separate small pot, bring about 2 cups water to a boil an add tomato paste. Break down with a fork and liquefy and bring to a boil. Add to tomato/garlic mixture.

Add salt and pepper to taste and about a tablespoon each of oregano, parsley, and basil.

Cover and simmer on stove top for at least one hour.

as a future reference (and this is just from me READING recipes, i have yet to try this), i heard to make sure you get canned tomatoes that are imported from italy. cant verify if it makes a difference, but yeah, thats what i read

just bought some cans this week...but havent made the sauce yet

SO I made my sauce and it stunk!!! I didnt have tomato paste and I guess it wasjust to acidic.. or something.. it just didnt taste so great.. bette rluck next time!! Thanks for all the recipe's.

If your sauce is too acidic, than add a tea spoon of baking powder while it is cooking. It brings all the acid to the top and you can just spoon it off the top.

Yup yup...personally I find carrots to work better than potatoes (maybe they have a higher sugar content?), but either will do!

Yea DH told me to add sugar if i needed too.. and then I guess I forgot .. Hes the darn cook in the family but I was tryin to show some skills and def did not work in my favor, loll!!

Yup yup...personally I find carrots to work better than potatoes (maybe they have a higher sugar content?), but either will do!



carrots in sauce are my fav!!!

Prep Time: 20 minutes
Cook Time: 45 minutes
Total Time: 65 minutes
Ingredients:

* 1/4 cup extra-virgin olive oil
* 1 large onion, peeled, coarsely chopped (2 cups)
* 1 large carrot or 2 small carrots, peeled, coarsely chopped (about 3/4 cup)
* 3 garlic cloves, peeled, finely chopped
* 5 large tomatoes, coarsely chopped (4 cups) or 2 (28-ounce) cans whole tomatoes, drained, coarsely chopped
* 2 Tablespoons tomato paste
* Coarse sea salt to taste
* Freshly ground black pepper to taste

Preparation:
In a large heavy skillet, heat the olive oil over medium-high heat. Saute the onion and carrot for 2 to 3 minutes, reduce the heat to medium, cover and sweat the vegetables over medium heat for about 25 minutes or until soft and golden.

Add the garlic, stir well, cover and sweat for 5 minutes more or until softened. Add the tomatoes and tomato paste. Bring to a boil, reduce the heat to medium-low and simmer, uncovered, for about 10 minutes to blend the flavors.

Push the cooked sauce through a food mill or blend in a pressure cooker and push through a sturdy, small-holed strainer into a large bowl. Add salt and pepper to taste.

The sauce can be cooled and stored in the refrigerator for up to 1 week or frozen up to 3 months.

Another thing is, I wouldm't use Hunt's tomatoes. Not sure if it makes a big difference, but I am usually a tutto rosso kinda girl

me too. or san marzano. but im thinking of switching to pom after hearing about how bad cans are...
