Re: Needed for Cookbook

Here's an easy one, but I recently learned that not everyone knows this.

To prevent the crust of a pie from burning or getting too crisp, cover the crust with foil and take off the foil for the last 5-10 minutes of baking. This is particularly important when making a one-crust pie (only a bottom crust, no top crust). For a one crust pie, cut your foil into thin strips and cover the crust along the rim of your pie dish.

Getting the Best Baking Conditions for Cookies

Bake one sheet of cookies at a time. Center the rack in the middle of the oven. If you put two baking sheets in the oven at one time, it is best to switch their positions halfway through the baking time. Allow cookie sheets to cool thoroughly between batches. Putting the dough onto hot cookie sheets may cause the cookies to spread and brown too much around the edges.

When you freeze bacon, arrange the strips flat, slice by slice, on waxed paper, then roll them up. Put them in a plastic bag in the freeze. To use, unroll and peel off the necessary number of slices.

Potatoes will take food stains off of your fingers. Just slice and rub the raw potato on your skin and rinse with water. Just the same, if you're peeling shrimp or cleaning fresh fish and you don't want the smell to remain on your hands all day, squish a few fresh strawberries between your fingers for a minute or two, then rinse with soap and water.

To keep potatoes from budding, place an apple in the bag with the potatoes

For fluffier, whiter rice, add one teaspoon of lemon juice per quart of water

Cheese won't harden if you butter the exposed edges before storing

For the perfect boiled egg, cover eggs with cold water and a pinch of salt. Bring the water to a full boil. Remove the pan from the heat and cover. Let the eggs sit for 8-9 minutes. Drain the water and place the eggs in ice water to cool to stop the cooking process

Drain deep fried foods on brown paper grocery bags as opposed to paper towels to retain crispness

Use egg whites on top of all breads and cookies for an added shine, as well as to prevent over Browning!

To brown onions faster-add a 1/2 teaspoon of salt

to avoid rice from sticking add a few drops of lemon juice and a pinch of sugar

Remove food smell from refrigerator- Place a fresh slice of bread (uncovered) in the refrigerator and it will absorb most of the unpleasant odor.

For a quick defrost, place meat in a ziplock bag and submerge in room temperature water for 30 minutes! Work like a charm.

My BMs did recipe cards for my shower. My mom's friend (who didn't plug in her oven for 7 years until she needed it as a microwave) wrote on the card:

Penne ala Vodka

Step 1: Pick up the phone
Step 2: Dial (number for our local Mulberry Street) and order.
Step 3: Pay the delivery guy.

Note: Works equally well for homemade lasagna.

I cracked up.

I get that from DH all the time. He isn't even a chef, but he went to school for Hotel/Restaurant Management and took a lot of cooking classes. He is a complete control freak in the kitchen and LOVES to take over...even when I don't ask for him to!
