Am I dreaming this? Did someone post a penne with sausage recipe a few weeks ago that they said their DH loved?? I have some sausage defrosted that I must use and I swear someone posted something but I don't even know what to look up so I can't search it .... might have had some veggies in it, might have had a light cream sauce???
TIA!

I posted this receipe, not sure if its the one you are looking for....
Ingredients 2 medium eggplants, sliced 1/4-inch thick 1/3 cup olive oil, plus 2 tablespoons 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/2 pound penne pasta 1 medium onion, diced 1/2 pound ground beef 1/2 pound Italian pork sausage 1/4 cup Marsala wine 1 cup frozen peas, thawed 2 cups store-bought marinara sauce 1 1/2 cups diced smoked mozzarella cheese (about 6 ounces) 3/4 cup grated Pecorino Romano cheese, plus 1/4 cup 1 cup chopped fresh basil leaves Special equipment: 9-inch springform pan Directions Place a grill pan over medium-high heat or pre-heat a gas or charcoal grill. Using a pastry brush, lightly brush the eggplant slices with 1/3 cup olive oil and sprinkle with salt and pepper. Grill the eggplant until tender and colored with grill marks, about 4 minutes per side. Set aside.
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.
Meanwhile, warm the 2 tablespoons of olive oil in a large skillet. Add the onion and saute until tender, about 3 minutes. Add the beef and pork, and brown the meat, breaking it into bite-sized pieces with a wooden spoon, about 5 minutes. Add the Marsala and cook until the liquid has evaporated, about 3 minutes. Turn off the heat. Add the peas and marinara sauce and stir to combine. Add the cheeses, basil, and cooked pasta. Set aside.
Preheat the oven to 350 degrees F. Line the springform pan with the grilled eggplant. Be sure that the slices overlap and hang over the edge of the pan. Fill the pan with the pasta mixture, pressing down to make sure the pan is filling up evenly. Fold the eggplant slices up over the top of the pasta and add a few more slices on top to completely enclose the timbale. Bake the timbale until warmed through and the cheese has melted, about 30 minutes. Let rest on the counter for 10 minutes to set.
To serve, invert the timbale onto a serving plate and remove the springform pan. Sprinkle the remaining 1/4 cup grated Pecorino Romano cheese over the top. Slice and serve

WOW that looks like a crazy recipe! Looks great but the one I saw was a lot simpler. (I don't have half those ingredients or a spring form pan.)
Thanks though, I will save that one for another time!

Re: pasta with sausage recipe someone posted?
Was it the Giada recipe I posted a few months ago? This is delish btw
Rigatoni with Sausage, Peppers, and Onions
1/4 cup extra virgin olive oil 1 pound sweet Italian sausages 2 red bell peppers, cored, seeded, and sliced 2 yellow onions, sliced 1 teaspoon salt 1 teaspoon freshly ground black pepper 4 garlic cloves, chopped 1/2 teaspoon dried oregano 1/2 cup chopped fresh basil 2 tablespoons tomato paste 1 cup Marsala wine 1 (14.5 ounce) can diced tomatoes, with juice 1/4 teaspoon crushed red pepper flakes (optional) 1 pound rigatoni pasta Freshly grated Parmesan cheese, for garnish
Heat the oil in a large, heavy skillet over medium heat. Add the sausages and cook until brown on all sides, 7 to 10 minutes. Remove the sausages from the pan.
Keeping the pan over medium heat, add the bell peppers, onions, salt, and pepper and cook until golden, 5 minutes. Add the garlic, oregano, and basil and cook for 2 minutes. Add the tomato paste and stir until incorporated, then add the Marsala, tomatoes with their juice, and red pepper flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the brown bits. Bring to a simmer.
Cut the sausages into 4 to 6 pieces each. Return the sausages to the pan. Simmer uncovered until the sauce has thickened, about 20 minutes.
While the sauce simmers, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain the pasta and add to the thickened sauce; toss to combine. Spoon into individual bowls and sprinkle each serving with Parmesan cheese.

Yea I've made the pasta before which is really simple but never made the actual cake thing. I am going out to buy a spring form pan today so I can try it. It sounds yummy.
