So I am making my first meal with the slow cooker and DH bought home the pot roast yesterday and I just opened the package and the roast has been tied together I guess...my question is do I leave like that or take it out?

i take the strings off after it has cooked.

ditto. it keeps the meat tight so the juices dont all cook out. after its done, let it sit with the strings for about 20 mins so the juices settle and then cut them off.
