Any good ones that you've tried and are successful? Vegetarian ones, preferably.

I have a vegetarian spinach quiche recipe. You can also make it lactose intolerant friendly if you use the coffemates original creamer instead of heavy cream

Directions: -Sautee onions in butter -Add spinach (thaw part way in microwave and drain first) -Mix in flour and seasoning -Remove from heat -Beat eggs, cream, cheese together -Add in frying pan contents to egg mixture -Mix in empty pie shell -Cook 35 minutes at 400 degrees on a cookie sheet

Re: Quiche Recipes
Really Easy Quiche. You can substitue the bacon with turkey bacon
DIRECTIONS Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan. Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan. Bake in preheated oven for 35 minutes, until set. Serve hot or cold.

Re: Quiche Recipes
I have a base recipe that I made up:
Store bought pie crust 7 Eggs (I don't know why 7-6 is not enough, 8 is too many ) 1/2 cup Milk (any type-I usually use skim) 1/2 cup Cheddar cheese Salt Pepper Bake at 400 degrees F for about 20 minutes then turn heat down to 350 degrees F for another 15 minutes.
Then I add whatever vegetables I'm in the mood for. My favorite one I've made so far is asparagus & cherry tomato. I roast the tomatoes and asparagus with a little salt, pepper, and olive oil for about 20 minutes. Let cool then add to egg mixture.
I also like a spinach quiche-just frozen chopped spinach defrosted and squeezed.

That does sound good - I think I will make it this weekend! And I looooove the coffeemate creamer, so friggin good (tastes like half and half to me, but less fat) so I think I will try that - thanks jess!

FYI, hormel makes real bacon bits in a jar, and you should be able to substitute them for the 8 slices. They tell you right on the jar how much equals one slice. Might be cheaper to do the real bacon, but if you're in a rush or don't feel like dirtying a pan and waiting for bacon (READ: if you're lazy like me), the hormel bacon bits work! They are yummy too.

I use those all the time in my quiches. I eyeball everything-it's so hard to actually give someone a recipe. DH will be like I want to make those potatoes you make-what's the recipe?

'store bought pie crust' = frozen one in metal pan, or pillsbury rolled out one? And do I defrost or bake in it frozen?

I use the pillsbury rolled out one-if you tell I will have to kill you. I just defrost in the fridge overnight.
