Any good ones that you've tried and are successful? Vegetarian ones, preferably.

I have a base recipe that I made up:

Store bought pie crust
7 Eggs (I don't know why 7-6 is not enough, 8 is too many )
1/2 cup Milk (any type-I usually use skim)
1/2 cup Cheddar cheese
Salt
Pepper
Bake at 400 degrees F for about 20 minutes then turn heat down to 350 degrees F for another 15 minutes.

Then I add whatever vegetables I'm in the mood for. My favorite one I've made so far is asparagus & cherry tomato. I roast the tomatoes and asparagus with a little salt, pepper, and olive oil for about 20 minutes. Let cool then add to egg mixture.

I also like a spinach quiche-just frozen chopped spinach defrosted and squeezed.

So - dumb question.

'store bought pie crust' = frozen one in metal pan, or pillsbury rolled out one? And do I defrost or bake in it frozen?

I use the pillsbury rolled out one-if you tell I will have to kill you. I just defrost in the fridge overnight.

Awesome. And those come with TWO crusts. You freeze them and then reuse them?

You can use either. The frozen one will be easier than the pillsbury one

But you'd defrost that before putting the ingredients in it, correct?

Instead of eggs, can you use egg whites? Will it make it healthier?

I usually just take it out of the freezer before I start and by the time i'm done preparing all the ingredients that go in the quiche it's already thawed out

Haha...great line buddy. Quiche Lorraine is usually bacon and gruyere cheese. This is one recipe that I really like.
