salad for dinner

Got home from work early and just prepped everything...

black beans
corn
cucumber
tomatoes
avocado
and grilled chicken

tossed with a homemade cilantro vinaigrette!

I stole a bunch of cucumber while I was chopping

We eat salad for dinner a bunch once the weather gets hot...but not wimpy, light salads! I try to beef them up a bit and make them substantial. I've made some pretty whack salads in the past but I love when I come up with tasty and new combos!

I think that's where I mess up - my salads are always wimpy, so they end up being just a salad, and then we have a regular meal. Please share some yummy recipes - I'd love to start doing this on a regular basis!

DH never ate salad before I made Taco Salad. Now it's one of his favorite meals. It's so simple, I just brown ground beef and add a packet of taco seasoning and heat up a can of black beans. Then on top of a big bed of lettuce I layer the ground beef, black beans, diced tomatoes, shredded cheese, tortilla strips and maybe a spoon full of sour cream. It's certainly NOT a healthy salad, but it's so yummy and easy to throw together.
