weekday dinners
What do you girls typically make for dinner during the week. I'm trying to figure out new things to eat but keep in mind.. i'm just learning to cook lol.

pasta, chicken, steaks....anything that takes maybe 20 minutes to make.pizza is good to make by urself too, stop on the way home, buy some dough, shredded cheese and a small can of ready made sauce and whatever else you want on it.

lets see, last week i remember making somespaghetti arrabiatta with falafel balls (instead of meat balls)
black bean and brown rice casserole, which we scooped out and put it on tortillas to make our own burritos
mixed green salad with avocado, blood oranges and black berries (yum!)
veggie burgers
foil-steamed, marinated tilapia
one night we had leftovers from earlier in the week
...just broke out the crock pot this wknd, so im looking to make something in it this week.

Trader Joe's has some fantastic prepped items that really help..We have sweet potatoe fries at least once a week (Traders has pre-peeled/pre-chopped SPs...I just sprinkle EVOO and salt and pepper and put them in the oven at whatever temp the main dish requires)
We have some type of ground turkey every week (turkey and veggie meatloaf, turkey meatballs, etc).
Trader's also has a great pre-marinated pot roast. Take al the prep-work out and just requires to be cooked in the oven for an hour.
We have fish twice a week at least (salmon, mahi mahi, cod). I buy the flash frozen filets from traders. There are recipes that allow you to cook with the frozen filets....so quick and awesome!
I always make at least one veggie and usually brown rice. DH really prefers to eat healthy during the week!

Pepper Steak
Chicken Soup (haven't tried this yet but have the McCormick's recipe at home for it)
Beef Stew
Sausage and Peppers
Regular:
Stir Fry
Meatloaf
macaroni and sauce
Chicken Cutlets
Fish
Fried Shrimp
Steak
Hot Dogs and Hamburgers
Sweet and Sour Meatballs
My Grandmother's Chicken Soup
Sides:
Any Noodle or rice side is good
Homemade french fries (or frozen)
Broccoli and cheese
String beans with garlic and oil
Roasted Potatoes
Everything I make is REALLY simple and doesn't take much work. I'm a HUGE fan of the crockpot since it's ready when we get home and my Grandmother's Chicken Soup is possibly the simpliest recipe I have!

Stir-fry...really, really easy to make, and you can change up the kind of sauce so it doesn't get boring. You can do rice or noodles...it's really easy to change up stir-fries.Pasta with tomato sauce, vodka sauce, pesto sauce, or garlic and oil and lots of veggies.
Homemade pizza - so easy! Just get some dough (I get mine at Trader Joe's), some sauce and shredded cheese and whatever toppings you like. Don't be weirded out if you can't shape it perfectly. Mine always comes out so oddly shaped but who cares when it tastes so good? Serve with a salad.
On some weekends I make a big pot of soup or chili, which we eat with (or as) meals during the week.
Tacos or burritos...all you really need to cook is the meat or beans. Everything else is just cold toppings that you need to cut up (tomatoes, lettuce, cheese, etc..)
Veggie burgers...we always have them in the freezer and they're good for a last-minute thing, or if I just don't feel up to cooking. Same with cans of soup and cheese for sandwiches.
Generally, these are the kind of weeknight meals I make. I leave bigger things, like chili, lasagna, eggplant parm, etc for the weekend when I have the time to make it. Usually I make a big enough amount to have throughout the week as well.

lots of crockpot stuff which is great cause i have tons of leftoversturkey burgers no bun with corn on the cob beans with chipotle
grill any type of meat with broiled mixed veggies
oh and indian food!! soooooooooo easy to make

We usually order take out one night and then on the weekend it's usually up on the air. We're out on LI at my parent's house a lot.
I've been really into cooking lately and trying new meals. 2 weeks ago my dad and sisters came over for dinner and I busted out the crock pot - I made pulled pork, mac and cheese, corn bread and home made sweet potato fries. I really surprised myself lol

DH is a very picky eater so our dinner choices are the following:Loin of Pork with mashed potatoes
Grilled steak with potatoes
Beer Battered Fish with rice
Breaded & Fried Fish with homemade potato chips
Corned Beef with boiled potatoes
Chicken Cutlets with pasta
Fried Chicken with mashed potatoes
Roasted Chicken with oven roasted potatoes
Breaded & Fried Veal Chops with pasta
Marinated & Grilled Lamb Chops over Rice
Beef Barley Soup with homemade egg noodles
Pasta with fried zucchini
Chicken Soup
Hamburgers
I think I left out a couple of DHs other favorite meals but thats most of them.
Obviously my husband likes meat & potatoes.
& no veggies. He snacks on baby carrots while he cooks. If you are wondering he does cook other food items for me, he just doesn't eat them.

I'm not much of a cook so I make very simple things:Grilled chicken, brown rice and veggies
Salmon and brown rice
Baked ziti
lasagna
shrimp scampi (i used the yellow gorton's box- so easy) with linguini
turkey burgers
tacos ( i get the kits)
chicken fajitas
homemade pizza (VERY easy!)

I feel like I make the same stuff, plus I cook healthy and it is hard to make things taste good and be healthy but I have found some great tricks.here is what I usually make
pasta
Spinach Lasagna rolls
Spinach in a light cream sauce
Broccoli garlic & oil
Spinach backed zitti
fresh chopped tomato basil sauce
Spinach mac & cheese
Red sauce with meat balls and sausage (not healthy)
meats (this is tricky because I don't eat red meat)
baked chicken cutlets
fried chicken cutlets
chicken fajitas
WW chicken cordon bleu
salsa chicken
roasted chicken
sausage, peppers & onions
turkey meatloaf
turkey tacos
turkey southwestern sloppy joes
spinach turkey burgers
chicken with zucchini and feta
BLTs
baked chicken with diced tomatos and melted mozzarella
sides
asparagus with lemon pepper

rosted potatos
baked patatos
brown rice white rice

we usually just grill some meat (chicken cutlets, pork chops, turkey burgers) add some adobo or whatever seasoning mix we bought from trader joes. then we make a thing of frozen veggies. if we're really hungry we'll add bread, rice, mashed potatoes or fries (the frozen kind, usually sweet potato). Neither of us have the wherewithal or creativity to go beyond that on weeknites.

Most of the time we eat like college kids. I stopped eating red meat and pork 2 years ago...so our selections got even smaller. We do a lot of BLT's, pastas, shrimp tacos, tortilla crusted tilapia (from Costco), veggie burgers (me), Bubba burgers (him), chilaquiles, chicken strips, chicken nuggets..etc etcI keep it super easy during the week.

i stopped making big dinners. im not in the mood anymore. working 12hr days then coming home to study, cook, clean,gym, run erands... im starting to get grays and wrinkles. so i dont spend more than 20 min coooking.ill make pasta, pizza, steak, mahi mahi.. but quick shyt.
im lucky dh is content with a can of beans and hot sauce.
