quick stuff! Pork tenderloin, roast chicken breasts, baked fish, pork chops, jambalaya (I have a fast, one-pot recipe!).

I try to mix it up, but some of our recent/soon to be dinners have included:Ribs in Jack Daniels sauce
Turkey meatloaf
Blue cheese stuffed jalapeno burgers
Manicotti
Eggplant Parmigiana
Shrimp
Mussels
Pasta w/ red sauce and broccoli
Chicken w/ salsa and cheddar

Not much of a cook- these are my basics:Soy Mac and Cheese
Pasta Primavera
Lots of different soups - usually Veggie or Bean
Veggie burritos or bean, rice and cheese burritos
Big salad with lots of different ingredients ( cheese, fruit, nuts, avocado, shredded carrots, baby spinach etc)
Tofu, brown rice and veggie stir fry.

DH claims to hate mexican food but loves soft tacos, so I make what i call mexican lasagna. I cook a pound of ground turkey breast and spice it up with taco seasoning (the low sodium kind, DH has no idea); then i layer it in my corning ware with low carb tortillas and low fat cheese. We get at least 2 dinners and a lunch out of it and DH loves it but has no clue its not bad for him.

you can go to www.allrecipes.com it has soooo many recipes, basically everything, and the great part is other people who have tried and tasted the dish at home put their reviews of how good it is, what to adjust. I live by that site!Anyways today i made steaks and mash potatoes. Pretty easy and simple to cook! I also make A LOT of fishh...bake it or pan fry it, super easy and make veggies with it
You can do pasta's, griled chicken/or fry it... panini sandwiches, etc... let me knwo if you need a particula recipe

Lemon Garlic TilapiaIngredients
2 tilapia fillets
1 tablespoon and 1-1/2 teaspoons fresh lemon juice
1-1/2 teaspoons butter, melted
1/2 clove garlic, finely chopped
1/2 teaspoon dried parsley flakes
pepper to taste
Directions
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 4 servings.1.Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
2.Rinse tilapia fillets under cool water, and pat dry with paper towels.
3.Place fillets in baking dish. SAUTE lemon juice with garlic, parsley, and pepper. than pour on filets
4.Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

Chicken Breasts with Balsamic Vinegar and GarlicPrep Time:

Original Recipe Yield 4 servings
Ingredients
4 skinless, boneless chicken breasts
salt and pepper to taste
3/4 pound fresh mushrooms, sliced
2 tablespoons all-purpose flour
2 tablespoons olive oil
6 cloves garlic
1/4 cup balsamic vinegar
3/4 cup chicken broth
1 bay leaf
1/4 teaspoon dried thyme
1 tablespoon butter
Directions
1.Season the chicken with salt and pepper. Rinse the mushrooms and pat dry. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
2.Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and simmer over medium low heat for 10 minutes, turning occasionally.
3.Transfer the chicken to a warm serving platter and cover with foil. Set aside. Continue simmering the sauce, uncovered, over medium high heat for about 7 minutes. Swirl in the butter or margarine and discard the bay leaf. Pour this mushroom sauce mixture over the chicken and serve.

During the week it's usually something that is Marinated & Sauteed like Chicken Breast, Porkchops, or Tilapia usually served with white rice, salad, or steamed veggies.Spagetti with Meat sauce is super easy, Spagetti with Meat Balls (Perdue usually)
If its a really lazy weeknight, a cold cut sandwich with chips, or a PBJ thank goodness DH is not that picky.
On Sunday's, its Tacos, Beef Stew, Chili or anything yummy and hearty I can throw in the slow cooker.
Allrecipes.com is really good, just pick a highly rated recipe, read the reviews, and put your own twist on a recipe. You usually can't go wrong.
