I have 5 eggs left that are due to expire on Friday...I'm using one today for the binding in my ricotta for lasagna. That leaves 4 eggs I need to get rid of by Friday. We don't have time to have omelets or any other type of eggs for breakfast on workdays, and I was going to make brownies but now I'm not because we have too many sweets in the house that already will probably go to waste since my parents brought donuts yesterday.
Can anyone think of anything I can do to get rid of these 4 eggs? I absolutely hate food waste, and it will really upset me if I have to throw them out. The lasagna will probably last for dinner for most of the week too so I'm stumped.

Re: Weird Recipe Request
How about hard boiling them. You can add them to a salad or just eat them as a quick breakfast or afternoon snack.
BTW, I wouldn't toss them on Friday anyway. My mom always keeps eggs a week or so past the date and they're fine.

You could make a fritatta. It reheats well and might be good for a quick breakfast in the morning.

Re: Weird Recipe Request
Thanks for the suggestions...I think I'm going to make a spaghetti pie with them, with some red, orange, and green peppers and onions. I really should just throw them at DH for his antics yesterday, but instead I'll be the bigger person and better spouse and make him a nice Lenten meal with them.

The best idea yet! But if you realllly don't like the victims, I'd let them sit in the fridge for another month or two first...
