Weird, top of our cake for 1 year anniversary

Ok so we did eat our cake yesterday for our anniversary. We kept the top of our cake and of course i was so afraid to eat it. I have a bad stomach and get sick with fresh cake lol. Ok so we cut into it and to my surprise its not stale at all, infact it was soft, we take a bite and we couldn't believe how good it was, it tasted fine, i wouldve never known it was year old cake if somebody didn't tell me.

Did this happen to anyone else? others ate our cake too and they all said the same. I think maybe it was the fondant that kept the inside fresh i dont know how else it would stay soft like that.

all we did was take it out of the freezer and left it out for a while, i would say about 2-3 hours actually. It was so weird though and cant figure out how it stayed so soft, i mean it still was moist. I kept the rest too and think i will eat more since i didnt get to eat alot of my wedding cake on day of just the few bites we had

ours was the same too...tasted fresh and was soft on the inside. Ours had fondant too, and I've heard that does help keep the inside fresh. The only part that wasn't edible was the fondant, it was kinda dried out.

Ours was awesome. So moist and yummy. We were surprised. If it looks like cake and tastes like cake, DH will eat it.

that happened to us too.

it defrosted and i was sure it was going to be disgusting. it was yellow cake with cannolli and chocolate mousse filling and when we ate it -- tasted just as good as it did the day of.

So glad that your cake was still good!! DH's cousin has been telling me for over a year that her cake was disgusting on her 1st anniversary. They actually brought it as part of their dessert to a family party last year! LOL...but of course you just HAVE to eat it!

I'm glad to hear that mostly everyone else's cake was still good. I definitely plan on eating mine. My mom keeps asking if i want to get rid of it, since it's taking up room in her freezer!! Plus, our bakery told us we can call them and they will make a replica top piece of cake for our 1 year for free! We'll probably eat both!

Glad it was good!!

Mine wasn't fondant, but I did wrap it in saran wrap, then put in a ziploc, then put in a tupperware... so I'm hoping that was airtight enough...

Our cake was awesome too! And we did NOT have fondant. I had heard a lot of people say their cake was gross and they barely could eat one piece, but DH and I both finished an entire slice! I could have eaten more, but we stopped there. I guess the RHs just know how to package them really well!!

We ate our cake on Sunday too! I forgot to take it out earlier so we could eat it on our actual anniversary on saturday.
It wasn't bad at all! We had a chunk of the top tier and it was half strawberry and half cannoli. The top part was a little dry, but the bottom with the cannoli filling was so moist and delicious! I couldn't believe how good the buttercream was, it tasted as if it was so fresh!

We froze our rehearsal dinner cake and ate it months later and it was delish!

I'm embarassed to say i'm not even sure where my wedding cake top is. I think my Mom has it. I hope my Mom has it.

I thought mine was pretty good too- I mean it didn't taste bakery fresh or anything but we ate an entire slice EACH!

we'll be eating ours monday...i was really nervous and kinda grossed out by the idea of it, but now that i read your post i'm kind of excited...i hope ours is still as good as yours!

i went vegan 4 months ago so technically i'm not supposed to eat it...but i think for our 1 year old wedding cake i can make an exception just this once...
