what do you make for dinner?

Original post by semi

This seems to be a never ending problem. What do you guys make for dinner?? I seem to be making the same meals over and over again. I need some new creative and easy ideas? Does anyone else have this problem. We just end up going out to dinner at the end because I can't nor can he, come up with some new ideas.

I forgot to add, beef stew, soups, ( chicken, matzoh ball, barley mushroom, sausage soup, split pea soup... and marinated boneless skinless chicken thighs on the Forman grill, oven stuffer roasters.
I always have in the house sweet poatatoes, regular potatoes, fresh veggies, and stuffing and rice mixes.
I absolutley love to cook!

This is often a huge problem, because DH works until midnight and I hate having to cook a big meal so late at night. Usually we just keep it simple, like hotdogs and hamburgers, or tacos, or when we're really lazy Ellio's pizzas. When I do cook, it's usually some sort of chicken, a starch, and a veg.

Cook ahead on weekends and reheat:
* ground turkey or ground beef chili (McCormicks)
* Steak Pizzaola
* Meat Sauce (aka gravy, aka Sunday sauce) - freeze sauce in small batches of tupperweare, freeze meat in ziplock - and take out what you need
* Soups (sausage soup, bean soup, chicken soup, beef stew)

Cook during the week:
* Chicken & veggie stir fry w/ wraps
* fried chicken cutlets
* meatloaf muffins (take any meatloaf recipe and make it in a muffin tin instead. takes about 20-25 minutes to cook, then freeze left overs in ziplock. 1 lb of meat makes about 12-14 muffins. take out what you need next time. I get about 2-1/2 to 3 meals from one 1lb of meat.)
* sausage & peppers
* penne ala vodka with chicken & spinach (this I even made ahead - did all the steps but didn't add the cream yet. On Thursday when I make it, I'll bring the sauce back up to a boil then add the cream and simmer for 20 minutes while the pasta is cooking)
* chicken cordon blue
* grilled chicken (garlic, oilive oil, oregano, squeeze of lemon juice)
* steak
* london broil
* boneless turkey breast roasted
* Ribs with BBQ Sauce
* Lamb Chops

ETA: I alwys plan out the meals for the week on say the Friday before, that way when I go food shopping I know what to buy. We don;t 100% stick to our list but I like to know that I have at least 4 ideas for dinner for the week. If I make all 4 great, if I make 3 that's OK, I have ngredients for next week.
You just have to rememebr to freeze what you aren't going to cook and defrost the night before.

Mmmmm, can I come over for dinner?
You are my inspiration - I always say I want to cook for the week over the weekend, but never manage to do it. I have been finding that when I do have leftovers, though, it is so mcuh easier to add a veggie or a salad and get it ready quick.

Re: what do you make for dinner?

come on over

I don't do it all the time but the weekend I do, I really really am happier during the week.

This weekend I am making:
Homemade Mac & Cheese - it'll make 4 side dishes over the next few weeks
Meat Sauce - that'll make 4-5 dinners at least
Eggplant Parm - only one eggplant - this won't last a week.

Re: what do you make for dinner?

My husband works nights and I go to school so my schedule fluctuates. Dinner doesn't happen for us often. One of us usually tries to make something and th eother heats it up when they get home. Here's our list:

chicken cutlets

Chicken stir fry

sausage and peppers

pasta and sauce

soup and salad

mac & cheese

Sorry it isn't very exciting...
