While we're talking about baking...

I might as well share a kitchen mishap from Saturday night. So I broke out my Kitchen-Aid mixer for the first time and I decided to make cupcakes and frosting from scratch. Nothing out of a box. Not a biggie for most but this was huge for me and coming straight from the heart.

So I used a muffin pan instead of a cupcake pan and I used way too much batter...my husband starts breaking chops that they looked like corn muffins. Which they did.

So here is the doozy....the icing. The consistency was like soup...so without consulting a cookbook or recipe I proceeded to scoop in 3-5 spoonfulls of flour.

I made cornbread muffin cupcakes with flour icing. DELISH.

The birthday girl ate one (She was sh1t faced thank goodness) and the rest are sitting lonely on my counter.

Hahaha don't worry!! I made a birthday cake for my mom's bday a few weeks ago. I guess I was half asleep when doing it and forgot that for 8' round cake pans you are supposed split a box in half and put half in each pan. So I put a full box in each 8' pan. Well those cakes were massive! But they were still delicious! So I bet your cupcakes were still tasty even if they were huge!

As for the icing.... next time add in powdered sugar to thicken it!

Ohhhh JilliB...why didn't I think of powdered sugar?! Thank you for the tip!

Everyone says that hardcore baking is so precise and like chemistry. I am like the total opposite! DH calls me the tsumani chef because I pull out like every spoon, dish, bowl, spatula we own.

I gotta practice!!

Haha I'm very precise when I bake. I could NEVER wing a recipe. My mom on the other hand, just throws together whatever and it always comes out delicious! I WISH I could do that!

I am the same. I refuse to measure things too precisely. Im all about improvising.... when i think of some of the cakes I brought to my in-laws I CRINGE. Last birthday I went to Crumbs for red velvet cake. Much better idea.
