The other night I made the laughing cow chicken which was awesome! It was so creamy and DH loved it.

Have nothing so I was going to stop .. I may just make a turkey burger and vegetables.

Ive been running in the a.m. because Im never sure what my night looks like - I take customers out a lot so it always depends. But on the weekend I definitely would! Its so nice to run along the water in Hoboken! Its cold out now though - I have to get warm running clothes

What's laughing cow chicken?!



Someone posted this a while ago and I bookmarked it. It's so easy and delicious! I used the garlic herb laughing cow to give it some extra flavor and I used regular bread crumbs instead of shake and bake.


LAUGHING COW CHICKEN
4 SERVINGS 5 POINTS

4 4oz chicken breasts
1 package deli sliced ham
4 laughing cow cheese wedges
8 - 12 toothpicks
1/2 package shake n bake original
cooking spray.

Heat oven to 375 degrees. Pound chicken breasts to about 1/4' thick. Place 3 slices of ham on breast and spread one cheese wedge on top. Roll and secure with toothpicks. Place edge side down in sprayed baking dish and spray chicken with cooking spray. Sprinkle with shake n bake. Bake 45 minutes.

mmmmmm I LOVE laughing cow - problem is...after once wedge I always eat like 3-5 more!

one is never enough! That chicken dish sounds delishhh!

I am thrilled about this because getting home so late stinks and 4 course dinners and fancy restaurants really lose their appeal after a while! Especially when you're dining with 60-70 year old doctors.

Im an interdealer broker. I trade preferred stock and hybrid bonds. Love it! but my clients are right around my age.
