Re: Anna

I dont cook many different seafood dishes (yet )

I just looked it up. I found something:
BUON APPETTITO

CALAMARI IMBOTTITI
(stuffed squid)

--------------------------------------------------------------------------------
Source: The Home Book of Italian cooking

Description: CALAMARI
Serves: 8

--------------------------------------------------------------------------------

Ingredients
8 small squid
1 small onion,chopped
2 tablespoons raisins
1 1/2 cups bread crumbs
1 teaspoon minced parsley
2 tablespoons grated Parmesan cheese
salt and pepper
1 egg ,well beaten
1 #2 can tomatoes
4 tablespoon olive oil
1 clove garlic

Preparation
Have fish dealer clean squid thoroughly, removing eyes, outside skin and intestines. Cut off heads and tentacles. Wash well, and drain. Combine remaining ingredients, and fill the cavity in each squid with stuffing. Sew squid closed, or fasten with toothpicks. Place in baking dish or pan, and cover with the following sauce:
1 #2 can tomatoes 4 tablespoon olive oil 1 clove garlic
Brown garlic in oil, mash tomatoes with fork, and add. Simmer for 10 minutes. Then pour over squid and bake in hot oven 400 deg for 35 minutes , or until tender. Serve whole with sauce.

Re: Anna

If it helps any....

It can be made a few different ways, but I've always made it with eggs, parm.cheese, salt, pepper, garlic powder, breadcrumbs and a little red pepper.

I clean and stuff the squid with the above...put a toothpick in the end to hold it closed and cook it in sauce. I put the sauce over pasta (ling.) and serve the squid separetly.

(I got this recipe from my mother (she doesn't even speak english...she litterally off the boat)!

Good Luck!!

BTW...a little tip for ya...don't stuff the squid completely...it srinks A LOT when you cook it.

Re: Anna

UGH, He's the worse !! We were just with him ALL DAY Sunday (my best friends wedding). He was telling me and my sister to shut up all day. We're always yelling right back at him He's a perfectionist, so he'll tell you to move this way and that way, 35 times in 95 degrees, so it gets frustrating. He's a good guy though. Gotta love him. Thank God his son is calm, keeps the sanity between them

Re: Anna

He has several famous lines on the big day. (After you hear them at a bazillion weddings, its not funny, its corny).

When he wants groom to put his hand under the bride's bouquet, he goes 'OKay, put your hand under the bush'
Ha ha very funny
