I just looked at the flowers you like. I've deen delphineums in arrangements. Tall, soiky stems, can also use stock. The blue dendrobium are just white orchids that are dyed blue. They don't occur naturally. But these are not considered wildflowers. Bachelor's buttons are wildflowers, they are small and have very thin stems. i grow them in my garden.
Have you spoken with a florist about the availability of wildflowers and of using them ? This might be a good start before you have your heart set on them and find out you can't have them.
