We invited 150 and we only have 94 that accepted. Our minimum is 125 It's really disappointing because a lot of the people who declined were people we thought would definitely be able to make it, but a lot of people have other weddings or have to be out of town for work.
I'm going to call my banquet manager but he's on vacation til Friday. I can't even ask to upgrade my meal selection because I have to send out my menu information tomorrow to be printed.
Any suggestions?

Or if you are getting your cake through them maybe they can upgrade the cake?
I was also going to suggest that maybe they can make the cocktail hour longer... but you already made up those cards for the oot guests...

Well you should also add in your vendors to that minimum number, although most places you pay less after minimum for the vondors at the wedding but in your case they will just be a plate you have to pay in full. So at least you know you don't have those plates empty.

I'm feeling like an ebay auction might be in order here! I remember a post a while back that had a link to an ebay auction selling places at somebody's wedding (the poster thought it was funny, she wasn't the one selling the seats). I mocked those people at the time, but now I have a new appreciation for what they did

Will GIHC give you maybe a 'rain check' or gift certificate for the amount your are spending for uneaten plates... would you possibly hold another affair there in the future? ( anniversary party, suprise party, baptism, etc)
I know sandcastle offered that to us.

If you didn't invite anyone at work, try sending those invitations out. Ask anyone that you didn't ask with a guest, to bring a guest. Make sure you count you and your FH. If you are having a priest, invite him!! Anything to fill up another table and try to make your minimum
Worse case scenario, ask them to pack the food they were supposed to serve for the extra people you are paying for. You can either bring it home, or maybe call a shelter and see if they can pick it up.
