I know it is a bit early to set up my menu... but I keep looking at these choices! :)
Hamlet Willow Creek offers Chilean Sea Bass (one of my FAVORITES), but it notes seasonal availability... what exactly is the chilean sea bass season?

i am not sure if it ever is...however many restaurants are not serving it anymore because it has become endangered. Many local places now serve farm raised ones,......

Re: Chilean Sea Bass
I got married there in July and we had it....just ask Barbara, she'll let you know.
ETA: I think we had our tasting in May and I am almost positive we had it at the tasting.

This is what my hall said as well...no guarantees that sea bass will be available.

I was supposed to have sea bass at my wedding. The price skyrocketed and we had to choose salmon instead to keep costs down. Make sure your caterer actually gives you sea bass and doesnt try to pass off another fish as sea bass. I have heard of caterers doing that.

Re: Chilean Sea Bass
i'm not sure about seasonality, but chilean sea bass is commercially endangered. fishing for them is regulated and there are only a couple of u.s. fisheries that fish for them. maybe that has something to do with it?

Based on articles I've read I wouldn't get my hopes up too much because there has been talk of banning fishing or strictly limiting fishing (more so than it is) of Chilean Sea Bass. I'm getting married at HWC also, and if I can have it I'll probably go for it, but I'm preparing to get the tilapia instead. I spoke to Barbara recently and she said they review and change the menu annually, so before you get your heart set on a menu I'd probably wait it out.

My hopes are not up about the bass.. but I will be EXTREMELY disappointed if too much of that menu changes. The menu is what sold me on the place more than anything else!

I know! But, based on the menu now, even if things change it's still going to be delicious, and probably for the better! I've heard so many great things, and Barbara runs a tight ship!

OMG- all the food there is so good, though! You may not be able to get the sea bass, but I am sure everything else is delish! FH loved the filet and horseradish crusted chicken!

I had my wedding at the Hamlet Willow Creek in October 2005 and we were unable to get Chilean Sea Bass, instead we went with the Salmon but they put the same sauce as they would have with the sea bass and it was excellent!!

they can always use frozen bc thats what halls always use they just tell u its 'fresh' bc thats what we wanna hear! even 2 halls we went too said its a lie when they tell you its fresh... not sure when the season is though...i know May is my friends wedding and thats one of her picks!
