a professor once told me to answer that question by saying, 'chocolate.' i told my current boss that & he turned bright red from laughing so hard.

OMG I love it!!! i'm so using that on the next interview!! hahahaha

another good one is:

'I'd really like to enhance my technical knowledge of blah blah blah.'

for me, since I'm an accountant in a hedge fund, I always say something like I'd love to be better versed in Excel macros or industry products.
