Ok, so I've never been hiking before but I really want to go!
Any good beginner-ish trails? (Is there even such a thing?)

There are some great trials right up in Westchester! Last June DH and I did the Mianus River Gorge which was fun, only 45 min away and for beginners! Here's a link for some more info: River Gorge

I have only heard good things about Mohonk too! I don't know if I will get there anytime in the near future but I do hope to go eventually!

Re: Hiking
I go in Westhcester, just because that's where I live.
We go to the Rockefeller Presevere near Tarrytown. They give you a little map with decription of the terrain on the different paths.
On LI, I lived near Bethpage State Park & used ot walk on the trail ( or bike more often) but that's paved & not really hiking.

I used to lead hikes for Eastern Mountain Sports a few years ago and NJ has some BEAUTIFUL places...the Delaware water gap has gorgoeus trails, one at Sunfish pond that leads you uphill to a beautiful lake formed by glaciers...its amazing..you can lay on the rocks and catch some rays, there is kayakng and canoeing..I know its a bit of a drive..but well worth it in my opinion, you could even camp out!!! Have fun whereever you edcide to go!!!

My sister went to school in New Paltz and yes, the hiking is great. I would suggest the Pine Barrens on Long Island. I think it starts in Rocky Point and goes to the Hamptons.
