Ditto. Honestly, I don't really think you need more than one choice of each. Either way, your guests are only getting one plate.
Besides my cocktail hour has TONS of food and we're having a full Viennese, so I think it'll be plenty.

we have a choice btwn a 5 choices or 9 choices menu. we choose the 5 choice b/c our BM was able to then bring the price per person down by about $3

I am getting 5 entrees.
Where are you getting married? If you are getting married at a one wedding at a time place it makes sense to only get 3 entree choices. I think you have to keep that in mind, but definitely negotiate for more.

3 and they will make anything if someone has a specific food allergy or is a vegitarian. I am happy with 3 bc we are adding another course and there will be a TON of food at the CH. Plus, we are doing it a little different by having a formal sit down dinner (in a separate from the dancing) so I am happy with less of an option in the interest of time for the reception.

plus a couple of extra options because my mom & bother are lactose intolerant & my sister & aunt have celiac disease (they can't eat anything with wheat)
i have never been to a wedding with more then 3 choices. besides we got a bunch of extra choices at our CH

Don't worry about it... There's nothing wrong with three.
When you are at a place like a mansion or a hotel, where they don't do loads and loads of weddings, you are more likely to get three. At The GCH, they told us they recommend three bc you get the fastest service with three or fewer, but they would do up to five. But we liked the thought of three choices so that is what we are doing. As Christina (dreamerchic33) said, when the entrees are very detailed, it is difficult for the chef and staff to pop out a whole bunch of entrees.
ETA: And, of course, they will accommodate anyone with special dietary needs, such as vegans/vegetarians, or people with allergies.

But one is a duet course so they are getting both meat and chicken on the same plate. Then a fish probably a veg option also.
