Most of the ones I've seen have been 1/3 of the total.

i only needed to give $100 non-refundable. this was just to secure the date. half way between the date i secured the date and the wedding date, i was to give a total of 50%. the last 50% was due at the final overview two weeks before wedding, when she ordered the flowers.
