They are a process because its like a 2 step thing, but so worth it. I forgot my jams at the store so I have to make them later today (after braving the supermarket)

I use the same recipe heather posted, but I weight them down in the fridge overnight with every can in my cabinet (and sometimes my hand dumbells- lol)

I think once you make them a few times they arent so bad. Ive made them in red white and blue for 4th of july and different pinks for a baby shower.

I have to make pignoli cookies too today . Those are really easy though.

It *is* a process, but its really not that bad. It just takes 2 days to do them.

8 oz Almond paste
1 cup softened butter
1 cup white sugar
4 eggs, separated
2 cups all purpose flower
red & green food coloring
seedless raspberry jam
apricot jam
semi sweet chocolate chips (I use 1 pkg)

1) heat oven to 350 and line 3 pans with parchment paper

2) In a large bowl, break apart almost paste with a fork and cream together with butter, sugar, and egg yolks. When mixture is fluffy and smooth, stir in flour to form a dough. In a small bowl, beat egg whites until soft peaks form. Fold egg whites into the dough. Divide dough into three equal portions. Mix one portion with red food coloring, one with green; the third stays plain. Spread each portion onto the parchment. (make sure they're about the same size b/c youre going to stack them)

3) bake 10-12 minutes until lightly browned and firm. Remove from parchment and cool on wire racks.

4) Place the green layer onto a piece of plastic wrap enough to wrap all layers. spread this with a thin layer of rasp jam and top with the uncolored layer. Spread w/apricot jam and top with pink layer. Wrap tightly w/plastic wrap and place on a cookie sheet; chill in the refrig. over night with some heavy books on top of the sheets to compress.

5) cut the compressed cookie thing into strips about 1 1/2 inches wide. Melt the chocolate in a double boiler and coat each of the strips with choc. Allow to cool in the fridge and cut into individual cookies.

thanks! What size pans do you use?

I use cookie sheets, but the batter itself is probably spread to about the size of a 9x13 pan. I free hand it b/c I feel like cookie sheets distribute heat better. Its a thick batter, so it won't be dripping and moving if it doesn't 'fill up' the whole space of the pan.
