Do I have to do one per person? I was thinking of making them double sided and buying snowflake placecard/picture holders to go with my theme and using them as stands. I would do 4 per table (2 on each side) Is that good enough lol?

I second that. I think that would be just fine! I went to a wedding recently where they didn't have menus on the table. The waiter had to come around one by one and show us a menu and we had to decide right on the spot.

that is definitely fine! I've been to more then one wedding where they didn't have any menu at all on the table and the waiter just verbally gave you the dinner choices.
