We used to go every year for July 4th

Royal Atlantic Beach Resort
http://www.royalatlantic.com/index.php

They have regular rooms and they also have rooms that are across the street from the beach that are more like mini-apartments. The only downside is definitely that most of the hotels in Montauk have a 3 or 4 night minimum stay.

HTH!

I stayed at the Panoramic View last summer for an event that FH was a part of.

The views are pretty ridic and the rooms were like suites - it was really nice

We go camping at hither hills every year....yes you sleep in a tent, but there are community bathrooms with indoor plumbing and hot water (most of the time lol)! And you are steps away from the beach! Very reasonable for a week. (I think less than $200!)

My favorite place is the Montauket, which looks kinda live a dive restaurant/bar but its got awesome awesome food and a great view of sunset on the lake.

Surfside Inn has a great restaurant too with a good view of the ocean.

Durea's has the best clam chowder and its BYOB! Also good for sunsets!

Re: NWR: Montauk

I have been to montauk every year since I was little and I know that if you go off season most hotels will allow you to stay for less nights than the minimums listed on their sites, so just call and see what you can do :)

FH & I stayed at the Harborside Motel & it was down the block from a bunch of restaurants. it wasn't on the beach but we had a beach access key, pool, fridge ..It wasn't the MOST beautiful but it was nice, had good ratings & seemed to be in a good spot.
