I have tasked with bringing a healthy Pasta/Vegetable salad to a bbq next Saturday (8/9)

Please help!
Does anyone have a good healthy recipe.

I am a HORRIBLE cook and SO not creative when it comes to food.

Sounds great! I'll have to skip the cheese (can't eat it on WW core) but other than that, sounds great, thanks.

this is always a big hit at bbq's. Im not sure if it matters but it's an antipasta salad but you can add a box of pasta if you want, it doesn't need it though. However, since they asked for you to make this healthy make sure you cut the oil in half, maybe even less than half, it's way too much and you don't need it!

Chickpea and Tomato Salad
Ingredients
2 15-ounce cans of garbanzo beans (chickpeas), drained and rinsed
4 tomatoes (about 2 lbs.), cored and chopped
4 large hard-boiled eggs, peeled and chopped
2 cups of chopped sweet onion (Vidalia, Walla walla, or another variety)
2/3 cup extra-virgin olive oil
6 Tbsp of white wine vinegar or sherry vinegar
1 teaspoon salt
Freshly ground pepper
Chopped parsley for garnish

Directions
1 Combine the garbanzo beans, tomatoes, eggs, and onion in a large bowl.
2 Separately mix the dressing ingredients in a jar or a small bowl - olive oil, vinegar, salt, and pepper. Pour over salad ingredients. Sprinkle on chopped parsley. Serve immediately.
You can chill the undressed salad up to six hours, until ready to serve.
Serves 6-8.

Re: NWR: Need Help with a Recipe

i found this one a few weeks ago.. its a bit of a twist to pasta salad... but its healthy and very yummy... It can be made with chicken.. i made it with out so you can do whatever you want...also i doubled the recipe

Ingredients:
1/2 lb thin spaghetti broken in half
1 1/2 cups snow peas, snapped in half
1 small yellow summer squash, cut into thin bite size strips
1 cup shredded carrots
1 cup shredded bok choy or savoy cabbage (i used nappa cabbage)
orange sections to garnish
3 tablespoons toasted sesame seeds

Citrus-Sesame Dressing:
1/4 cup fresh orange juice
2 tablespoons honey
4 teaspoons white wine vinegar or rice vinegar
1 teaspoon toasted sesame oil
1/8 teaspoon coarse salt
1/4 cup olice oil

Directions:
1. Cook the Pasta according to the package directions and drain it. Immediately rinse the pasta under cold running water and drain it again.

2. In a large bowl, toss together the pasta, snow peas, summer squash, carrots and bok choy.

3. To make the dressing, combine the orange juice, honey, vinegar, sesame oil, and salt in a small bowl and vigorously whisk the mixture. Slowly pour in the oilve oil, whisking all the while.(make sure you do this it helps the dressing from separating)

4. Pour enough dressing over the pasta and vegetables to coat them lightly, then toss them again. Just before serving top with orange sections and toasted sesame seeds!!
