NWR: Quick, easy, healthy recipes

I don't get out of work until 7 tonight, but I'm really going to try to go to the gym. Can you recommend your favorite quick easy, WW friendly recipe? I'm going to try to run home to grab my clothes between job 1 and job 2, so hopefully I can grab the stuff for it on the way home from the gym.

TIA!

This is also quick and easy:

Chicken with Broccoli and Garlic Sauce

POINTS® Value: 5
Servings: 4

Ingredients
2 tsp olive oil
1 pound(s) uncooked boneless, skinless chicken breast, cut into 1-inch pieces
1 tsp dried thyme, or 2 tbsp fresh minced thyme, or to taste
1/2 tsp table salt
1/4 tsp black pepper
3 medium garlic clove(s), minced, or more to taste
2 cup(s) broccoli, florets
1 1/2 cup(s) reduced-sodium chicken broth, divided
1 1/2 Tbsp cornstarch
2 cup(s) cooked brown rice, kept hot

Instructions
Heat oil in a large skillet over medium-high heat. Place chicken on a plate and season with thyme, salt and pepper. Add garlic to skillet and cook, stirring, 1 minute. Add chicken to skillet and cook until browned on all sides, stirring frequently, about 3 minutes.

Add broccoli to skillet, cover and cook 2 minutes. Add 1 cup of broth, cover and simmer until chicken is cooked through, about 5 minutes.

In a cup, dissolve cornstarch in remaining 1/2 cup of broth; add to skillet. Simmer until mixture thickens, stirring constantly, about 1 minute; serve over rice. Yields about 1 cup of chicken and broccoli and 1/2 cup of rice per serving.

Re: NWR: Quick, easy, healthy recipes

Also chicken/steak/shrimp quesadillas and fajitas are really easy and can be low point using low fat cheese and 1 point wraps.

Another quick go to that I use a lot is chicken/steak/shrimp and veggie stir fry.

Re: NWR: Quick, easy, healthy recipes

Here's mine - i made it last night already....

Cola chicken (4 servings, 4 points each)
4 boneless,skinless chicken breasts
1 cup ketchup
1 can diet cola

simmer all together in deep skillet for 45 minutes. Increase heat to high for the last five minutes to thicken sauce!
Last night we put it on top of a baked potato (that way no butter or sour cream). Whole meal = 6 points!!!!
