I only did 8 because we don't entertain too often - but did 12 for everday so there's more to use and we don't have to run the dishwasher everyday.

Re: Place setting for 8 or 12???
We just requested casual china, and we chose a setting for 8. My sister got 8 for her everyday dishes and her formal china. It depends how big your families are though, and how much entertaining you think you'll do. Our families are small, that's why we thought 8 was fine.

10-I'm not quite sure why this number does not get considered. 12 is too many, 8 too few. Why should 10 get neglected?

We got 12 for everyday and 16 for formal china. We both have large immediate families and I always hated the way it looks when you run out of china and someone eats on the everyday or paper on a special occasion. Also it never hurts to have extra pieces if something breaks and your pattern becomes discontinued. Just make sure you check EVERY piece as your registry fills up no matter if it is everyday or formal. There may be cracks, bumps, chipped paint or air bubbles.
