Hi, I know its ealry yet , BUT I want to print my menus ( bored) so We need help...we are having trouble deciding, so as many votes as possible...PLEASE!
1-LONG ISLAND DUCKLING-roasted to perfection, served either L'Orange,with a Framboise glaze, or with a classic Montmorency sauce
2-POLLO AI CARCIOFI-boneless breast of chicken with braised baby artichoke hearts topped with a traditional wild mushroom sauce
3-POULET DE LA PRINCESSES-boneless breast of chicken baked in a sherry wine sauce topped with fresh asparagus spears and melted mozzarella cheese
4-POLLO ROLLATINI-boneless breast of chicken stuffed with Parma prosciutto and mozzarella cheese, baked in a roasted demi-glaze sauce

I voted 2- Although, 3 or 4 would be an excellent choice as well.

I picked number three, and I will add my own little comment on chicken choices. I, as well as a lot of my friends, do not eat ANY red meat...JUST chicken, and I hate when I go to a wedding and the chicken has some sort of prosciutto or ham with it because then I won't eat it. And I don't eat duck because it's so high in fat, and it makes me a little queasy. So that's my opinion from a chicken only person.

Two or three. The previous post was correct... there are people who don't eat red meat and that would negate #4 for them. I never eat duck because it's very fatty.
Just my 2 cents

whati was going to say anyway was that duck should NEVER replace chicken. its a bit risky.
duck is great as a choice, so long as you have a chicken dish/

I think 3 sounds the best, with 4 as my second choice.
A lot of people I know don't like mushrooms, so I would rule out #2.
