Q-How do you sauteed fresh spinach...

Q-How do you sauteed fresh spinach...

...in garlic & oil? Do you braise the spinach first? Do you put it in after you cook the garlic a little?

Help! Help! I have a preggo craving for this so I'm desperate........


Also, anyone know how to do it with broccoli rabe? How do you get rid of some of the bitterness?

For both the fresh spinach and the broccoli rabe, you can blanch them in boiling water for just a minute or two - but, not too much or they will lose their flavor. The blanching definitely helps to take away the bitterness in the rabe.

I would sautee the garlic first to flavor the oil. You do have to be careful not to have the heat too high because garlic burns easily and loses its flavor. I would probably pull the garlic back out of the oil, then once the spinach is done, toss it back in.

I do these both the same way. Brown garlic in olive oil. Throw the spinach or rabe in there - it makes a scary crackling sound and then add about a cup of water. I add a lot of ground pepper and cover it.

I just let the garlic and oil brown a little then just add the spinach. I throw in a little salt & pepper and a pinch of nutmeg. Just cover and turn every minute. It instantly sautes.

As for rab, I boil it first to take out some of the bitterness, then I make it like the spinach.

You should never allow garlic to become brown...that means it's burnt and your dish will taste like burned garlic. Just a helpful hint!

Thanks Claud! I didn't mean to let the garlic actually burn. I am assuming whoever is cooking the garlic will know not to let it burn or to completely brown.

I've seen many cooking shows pull veggies out from cooking in hot water, and then dunk them in ice water .. apparently .. it quickly halts the cooking process, so they don't continue cooking from their own heat.

I've never tried this, though.

i pop boil the broccoli raab with a lil italian pepper and it takes most of the bitterness away. then i sauteed it in some mild olive oil and garlic a little garlic salt and presh pepper
