Re: rabbit recipe

This is how my mom makes it and it's delicious. Sorry I don't know specific measurements.

Sautee the rabbit in olive oil, garlic, and onions until it's golden brown on the outside. Then add water to cover the rabbit. Add oregano, parsely, salt, black pepper, and Rosemary. When the water evaporates, add white wine and let it finish browning.

OR

You can also put it in the oven with all the same ingredients (minus the water) and let it cook all together. You can also add potatoes if you like. Cover with foil and cook on 400-450. When it's cooked, remove the foil and let it brown a bit more for added color.

How do you make the stew?

xoxo

Is rabbit good? I've never had it, but it always seemed yummy.

Re: rabbit recipe

my family is italian and rabbit is always on the table for easter (although i pass).. but here is a recipe:

Heat olive oil in a sauce pan

Add two or three sliced cloves of garlic and the rest of the garlic head whole and brown it

Then, add the rabbit and brown it

Once the rabbit is brown, add half a glass of white wine and let it evaporate

Then, pull out the rabbit and put it in a dish on the side of your pot

To the pot where the rabbit had been, add half a can of crushed tomatoes and add salt, oregano, parsley, and basil – and cook it for 15 minutes with the cover on, stirring occasionally

After about 15 minutes, take the cover off, return the rabbit to the pot, and put the cover on again. Cook the rabbit in the sauce for 10 to 15 minutes, stirring occasionally

Finally, take the cover off and cook the rabbit at least one hour. It's done when the meat is fully cooked and tender.

I can completely appreciate this statement, even as a hardcore vegetarian. Makes sense to me!
