I don't know about the chicken yet, but we think we are doing Mahi Mahi for the fish.

Is Chilean Sea Bass off the endangered species list yet? lol.....one of my friends is a chef and that always irks him...he always says 'we can't buy CHILEAN sea bass...what you're getting is from somewhere else!'

for the chicken: chicken piccante- breast of chicken in a garlic- white wine sauce... had it at the tasting and its sooo good!!
we're not having a fish at the reception- but at the rehearsal dinner one of the choices is honey pecan crusted salmon- fmil is a HUUUUGE salmon fan ( shes a health nut!) so i knew right away she would pick this as one of choices

Chicken Francaise Salmon in a Dill Sauce Stuffed Shrimp Chateau Briand (Prime Rib) Some Vegetarian dish
And there's SECONDS for FREE!!! They come around with a big tray and offer the guest seconds... so if they didn't like the fish, they can get something else, etc.

Wow, that's pretty cool, Seconds. I've never heard of that before. Reading all these yummy foods is making me hungry
