In Suffolk: I would recomend the following -
Land's end in Sayville- but very expensive. Bellport Country Club -Bellport - nice people and a little more reasonable. Timberpoint - Oakdale- nice as well and really reasonable.
A know a couple getting married at the Snapper Inn in Oakdale and they are really happy about the lcoation adn price and food.
I looked at the Bourne Mansion, Oakdale. It is georgous but a little too pricey for me because you also have to pay a 4,000 site fee.

I would recommend you stay away from a beach venue in the winter just because it doesn't pay. CLM is beautiful but personally i would pick it if I were getting married in the spring, summer or early fall due to the boat arrival they offer and the water views.
The others have mentioned some great venues as well.
Keep in mind that your date is New Years eve and can be costly to book any venue and the vendors.

How about the Snapper Inn? My cousin's wedding was there last year and we had a blast and the food was great!
