Roasted lemon chicken

does anyone have a recipe for something like this - for one of those small chickens you put in the oven?

I am thinking of making something like this for easter

wash it.. pat it dry with paper towels.


lather it up with olive oil.. put salt pepper and oregano all over it.


depending on the type of roaster youre using..

if its a stand up.. just roast the chicken as is.. and squeezze lemon all over it when its cooked.. then leave it in the oven for another 5 min so the skin can get crispy


if youre using those oval roasting pans, put a lil bit of water on the bottom... season it like i said ... but inside the chicken add lemon wedges as well as onions. and all around the chicken cut up potatos, celery and corn and a lot of lemon wedges. also season the veggies with salt pepper and oregano. (u can add any other seasoning) but oregano and lemon go sooooo well together.

and the potatos will absorb the lemon.. but when they are done.. take the chicken out.. and broil the veggies for a few min.. but squeeze lemon all over them. so the potatos get a lil crispy on top

ok make sure u spray the rack top and buttom with cooking spray or oil.
