I need to learn about sausage. I went into the Italian Delicatessen yesterday and there were so many different types! I want sausage to go in my sauce with meatballs - what kind should I get?

I usually put sweet pork sausage in my sauce (DH is not a fan of the hot ones). I buy the fat ones, usually from the pork store or butcher.
I like the skinny cheese and parsley pork sausage (sold in pinwheel shape) for grilling.

Do you want the sausage just to flavor the sauce, or do you want chunks of sausage along with the meatballs????
To flavor the sauce .. I buy sweet italian saugage that's just the filling .. it's not actually sausage .. because it's not in casing. If I can't find this .. then when I cut the links apart, I remove the casing and will break the filling apart when I stir.
If using chunks of sausage along with the meatballs .. feel free to experiment. There are so many different kinds of sausages out there!
We don't ever go with the hot sausages either, but we do us pork .. turkey .. chicken .. chicken/parmesan cheese .. basically whatever sounds good that is available when I'm shopping for it.
