We are spending one week in Mexico, one day in Maimi and 7 days on a cruise leaving from Maimi.

If you are looking for a beautiful beach to chill but don't care about the nightlife check out Turks and Caicos. One of the private resorts has a package where they drop you off on a deserted island for the day. Hmmmm...... I wonder what you will be doing.

I went to Costa Rica a few years ago. It was GREAT!!! As for more travel/adventure, Peru might be nice - you can go to Macchu Piccu - Or a trip through the Amazon starting in Ecuador - you make a stop at the Galapagos Islands too.

Ireland for 7-10 days, then anywhere warm with a beach for 3-4 days.

You didn't mention how muchyou want to spend, but how about The Greek Islands - they are absoulutely beautiful and so much fun. You get a great mix of partying, adventure and history.
