Spinoff on breakfast question: What are you girls bringing to work for lunch thats healthy, filling and cheap?

I am SO sick of lean cuisine and trader Joe's meals.

Anyone have any creative ideas of cheap meals to bring to work? The more filling the better, Im usually FAMISHED by 2:30!

Also, any good recipes of stuff you can make in bulk on weekends that heats up well in the microwave for lunch?

I have been bringing a salad with some grilled chicken (I bake them), fat free mozzerlla (shredded) & fat free dressing. I accompany my lunch with some fruit (apple, grapes, melon)

For a snack, I have rice cakes with some peanut butter! Gets me through the day!

Funny you should ask, I was going to post a 'what's for lunch' thread!

Last night I made a salad:

Dole Spring Mix lettuce mixed with Dole Baby Spinach
1 cup steamed mushrooms
1 cup tomatoes
1 cup celery
1 cup baked chicken marinated in lemon juice & garlic seasoning

I'm really looking forward to 1pm.!!!

Kissy reminded me about dressing. I don't use dressing at all. If it's too dry (it usually isn't), I'll use some lemon juice.

The key to dressing is putting it on the side and dipping the salad into it. You wind up using a lot less!

I either eat a turkey sandwich on lite bread with a salad with fat free dressing or a SmartOnes (I get them when they are on sale).

ETA: I just saw you were sick of the lean cuisines. I find the sandwich/salad combo to be pretty filling (and less points than the frozen meals).

My favorite. I tried Zatarand's a few months ago, sooooo yummy. But the sodium in Zatarand's is unbelievable!

You're all making me hungry!

I have turkey/cheese on whole wheat with nonfat yogurt and a piece of fruit. I find that holds me pretty well until dinner. Sometimes I add granola to the yogurt or have a granola bar instead to switch it up

One of my favorite snacks is edamame. You can buy them frozen from Trader Joe's and all you have to do it heat them in the microwave. They're so filling and very good for you.

I usually have a sandwich for lunch, with some fruit and veggies. For my afternoon snack I often have a Kashi bar...they are really good and filling.

I usually buy a romaine lettuce salad bag and use some of that.. I add chick peas, baby marinated mushrooms, some beets, olives and then I will add chicken (if you don't feel like making it, you can buy the Tyson nuggets, warm them for about a minute, cut them up and add to the salad) you can also grill (I use my george foreman grill) to make mini rib eye steaks that take about 2 minutes to cook.. and low fat ranch dressing..

Oh yum.. such great ideas!

I love the idea of taking the tyson nuggets and putting them over a salad!

All the salad shortcuts are great ideas. I used to love bringing in salads but hated the prep work the night before!

Keep the ideas coming!! YUM!

I usually have turkey on whole wheat or multi-grain bread. I also bring yogurt and fruit and snack on that throughout the day whenever I get really hungry.

i have the same thing every day....boring but satisfying:
mixed greens with a handful of grape tomatoes, one hardboiled egg white, a couple of sliced black olives, some cucumber, and (if I have them) a couple of carrots (no dressing on the salad) with a can of seltzer.
So thrilling!!

I'ma picky eater, I hate any type of veggies I absolutely refuse to eat that stuff!!!! Some of my lunch I bring to work include my leftover from the night before, Leancuisine/Smart ones meals, an occasional peanut butter and jelly , sometimes a cold cut sandwich and soup. If I liked veggies I would def. eat salads! Hope this helps!

Stuff I make over the weekend - usually something with chicken and pasta. It always goes neatly into tupperware, and then into the microwave.

I also really like Martin's Whole Wheat Potato rolls for sanwiches or just as a side. They're ONE point on WW, but because they're whole wheat they're filling, and great when you want a darn piece of bread!!
