my dad has like 15 recipes that he works off of. my moms mother used to make it for him every year but she never gave him an actual recipe, just a box of notes. he has been putting all the notes together trying to get it to taste like hers.
he got the smell perfect.

That's like my problem too. My Dad's mom and her sisters used to make it for my Dad and we only know the ingredients (mostly). Meanwhile I made it with anchovies instead of sardines and forgot about the fennel. I'm like an idiot sometimes I swear.

St. Joseph is the Patron Saint of Sicily. its a big Italian tradition to give thanks to St. Joseph for preventing a famine in Sicily during the middle ages.

the traditional meal is Pasta con Sarde & the dessert is called St. Josephs pastry. i am 99% sure that its only made in bakeries for this feast day.

The pastry is basically a cream puff.....but a REALLY big one, lol

Nahhh, most bakeries make them year round now because they're so popular. I've definitely been able to get them on days other than today.

the biggest thing is that you MUST use fresh sardines. my dad is super picky & will only purchase ones that are a certain size. so what he does is buy them whenever he finds them, clean them & then freezes them.
he also uses only fresh fennel which he grows during the summer, cleans & freezes.
