No Cheesecake is not hard to make at all. I will email you the recipe when I get home. Very easy.

Pecan Pie - I have even seen them made in cupcake size servings - good to shared at work.

This is basic but what about rolled cookies in festive shapes? (Turkeys, leaves, etc)

Re: Thanksgiving desserts-need ideas!
I just had fun making Oreo dirt cake yesterday .. I filled three 7' pots, and added a real flower .. so they looked like potted flowers .. fooled everyone!!
Crush the cookies as fine as you can .. use a fork to sift the 'dirt' while continuing to crush. (I used a potato masher for crushing). Set dirt aside, splitting equally into two bowls.
Pour the milk into a large, empty bowl, and add both packs of pudding mix .. stir with wire wisk. When smooth, stir in Cool Whip well to distribute chocolate. Next, stir in cream cheese. When all these ingredients have been well blended, add one bowl of dirt and stir.
Using the remaining half of the dirt, spoon enough into your pot to cover the bottom. Then alternate a layer of pudding mixture, followed with a layer of dirt. The last, top layer needs to be of the dirt.
Insert your decoration. (For a Fall theme - try Gerber Daisies in Fall colors).
Enjoy!
(This can easily be prepared the night before it's needed).
