FH and I went to Carmine's in AC last week, and we always get the Chicken Saltimbocca.... it's chicken in a sauce similar to marsala, with proscuitto, spinach and fresh mozzarella.
I decided to give it a try tonight, after searching for a recipe that is closest to Carmine's...

Its too hot to cook, lolol. The other day I made beans and chicken flavored rice, quick and easy and YUMMY!!!

I have chicken marinating in the frig right now. So i will be making grilled chicken on the George Forman grill w/ some veggies.

i could go for a turkey burger with cheese tonight. Maybe i will make that and some burgers for FH. Too bad we dont have a backyard or a grill.

Not a clue... We're starting a healthier diet as of today (as I sit here and snack on Gardettos) So we're going to the grocery store to pick up some stuff and I don't have NO clue how to be healthy! Blah

angel hair pasta, grilled chicken, roasted red peppers, hot pepper flakes, fresh parsley, and fresh garlic (LOTS of garlic)

i dont know if they have carmine's recipes- but check out this website- they have all restaurant recipes- most have been amazingly close- the olive garden salad was my favorite
