Original post by clw924

Just wondering...whipped cream, butter cream and what I recently found out fondant? Am I missing any other topping?

Dark Chocolate Ganache as in the photo but with white candy orchids instead of the fruit. Pic of my candy orchids also included.

Fondant icing is usually something that places charge extra for to put on a cake. My reception hall included that icing if we wanted it on our cake. I was so excited! I said to my fiance I cannot believe it! I was positive we were going to have it on our cake.
I thought we were so lucky because usually most places charge you extra, in fact, at the time I worked at The Hamlet at Willow Creek where they charge extra if the B&G want that.
So I was telling our head chef at the Hamlet, Brian, one day about the icing FF was including! Brian said to me UGH fondant... and I said what? Too pricey? I said but they are including it.. so he said NO, not the price-- it tastes like CHALK. I was like what?!! I said but all the stars use it, he said that's b/c it looks nice and smooth. He told me you can get the same smooth look with buttercream that you can with fondant and buttercream tastes nicer. I personally do not like the look or the taste of whipcream.
Of course once I spoke with him, being the head chef at a reception hall, I went to FF and spoke with my BM. My BM, once I told her what Brian said, told me to go to their bakery (Audrey's) where they get their cakes and try the icings. Sure enough, fondant--CHALK. I was like OMG here I was just going to go with this and not think anything of it b/c it was so 'chic' to do so and it tastes bad!
Thank God for Brian and the other chefs at my job b/c I went with the buttercream on the outside and a chocolate pudding/oreo mix on the inside, it's like devils food it is SO good! I'm very excited to eat our cake. **The one thing the chef's told me to remember with buttercream is to make sure they refridgerate the cake until RIGHT before it is supposed to be brought out... it is the best for the cake.**
Hope that little story will help you out in your decision!! GOOD LUCK with everything!!

Well, read my post. The fondant was actually very good and not chalky.
