What are you using for the icing on the cake?

Original post by clw924

Just wondering...whipped cream, butter cream and what I recently found out fondant? Am I missing any other topping?

I don't like buttercream, and most people don't like fondant, so I'm probably using whipped cream. The drawback however, is that the cake must be refrigerated until you are ready to cut it.

has anyone ever considered having white chocolate encase the cake, they sell cakes like this on neiman marcus website and they look amazing, they look like fondant but are enrobed in chocolate

This was my cake. It was fondant covered in crystallized sugar and tasted out of this world.

What a beautiful cake. Did the fondant taste good because it had sugar in it?

Also, being that you had the ribbon top, I guess you didn;t use a cake topper?

Def buttercream , with my IBS I was afraid of the whipped cream b/c that cake is out in the room BEFORE your cocktail hour begins!!!

I didn't like any of the cake toppers I saw and wanted a very simple looking, elegant cake. So no cake topper. I was a little po-ed because the bow was supposed to be made from fondant, and he put a ribbon instead, but whatever, small detail. The fondant itself was actually better than I thought it would be, regardless of the sugar. I think it just depends on where you get it from and how fresh it is. I've had fondant that I hated, but this was pretty good.

Re: What are you using for the icing on the cake?

I used to work in a bakery so here are your options:

Buttercream (if you want a simple decoration, you may be able to do this, and it's not as sweet)

Wedding buttercream (thicker, sweeter, usually used for most decorating because you can do stuff with it)

Whipped cream (less sweet, less moldable, and has to be refrigerated)

Fondant (can do a lot with this, but it's an acquired taste - if you really want a fondant iced cake but don't want to eat it, I would suggest a smaller cake with sheet cakes for serving, or a fake cake (except for the top tier, the other tears would be decorated styrofoam) and then you can have sheet cake with whatever topping you want in the back for serving)

Ganache - which has not yet been mentioned, comes in white chocolate and dark chocolate - this is very rich and liquid fudge like, not malleable but if you want a smooth surface, it's an alternative to fondant - but you can't mold it, so i mean smooth when i say smooth. if you want decor, it'll have to be done in some sort of cream frosting on top of the ganache, or you could do fresh flowers or something like that.

Hope this helps!

We used fondant for our cake and I actually liked the taste of it! Our baker used something called 'white chocolate fondant' though, so it tasted like white chocolate instead of that kind of chalky taste. It was really good!
