We're not paying anything for the rabbi, but b/c we're getting married at a temple they charge a fee in the contract anyway even though we're not using that temple's rabbi.

I believe the average price is anywhere from $500-1000, Our rabbi, who is the rabbi at my parents synagogue and did my Bat MItzvah almost 15 years ago told us that he wouldn't take money from us so we are doing a donation to the synagogue instead. (he's also the one who told us the average going rate in a completely unrelated convo)

right, if your rabbi or cantor (ie-- you are a member of his/her congregation) is performing your wedding at the synangogue, he/she will not charge their honorarium (nice way of saying fee) couples in this situation usually make a donation to the rabbi or cantor's discretionary fund instead.
bonniejd is correct, the going rate for a rabbi or cantor on long island is between $500-1200
