How far in advance can I mix up the meat? Do I have to do it day of or can I mix it all up tonight and put it in the fridge until Saturday evening?

Hmmmmm IDK. But if you have reservations about it I wouldn't do it. It really doesn't tak long to make the mix. I would do it all Saturday
