I'm making Spinach and Feta stuffed Chicken breast. Fresh green beans light sauteed in extra virgin olive oil with a splash of lemon juice. I can't think of another side....maybe a side salad or wild grain rice.

oooh steph that sounds good.

Maybe I'll make that???

I can save the chinese for tomorrow's game.

Chinese is always good on Fridays....in fact we might have it tomorrow also. Here's the recipe for the chicken

WW POINTS® value | 5
Servings | 4
Preparation Time | 20 min
Cooking Time | 10 min
Level of Difficulty | Moderate

This Greek-inspired dish is brimming with lots of spinach, onion and feta. Pair it up with steamed rice for a complete meal. Or try it over a bed of mixed greens.

Ingredients
1 Tbsp olive oil, divided
1 small onion(s), chopped
10 oz spinach, fresh
1 tsp lemon zest
1/4 cup feta cheese, crumbled
1 tsp table salt, divided
1/2 tsp black pepper, divided
1 pound Tyson Boneless, Skinless Chicken Breast(s), four 4 oz cutlets

Instructions
* In a large nonstick skillet heat 1 teaspoon oil; sauté onion until golden, 5 minutes.

* Wilt spinach (steam spinach or heat damp spinach over medium heat in nonstick pan); stir in zest, feta, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.

* Divide spinach mixture between cutlets. Roll up and secure with toothpicks. Sprinkle with remaining salt and pepper.

* In same skillet, heat remaining oil over medium-high heat. Cook chicken, turning occasionally, until golden brown and cooked through, about 10 minutes. Remove toothpicks.

Turkey burgers- I put in ground turkey, eggs, some water, seasoned bread crumbs, fresh herbs, terayaki sauce, black pepper, onion powder, diced onions, garlic powder, some ketchup and mix it all up and make into patties, refrigerate and then will either bake them or put them on my health grill.

Last night I made what I call sausage soup.
Take 2 large cans of lower sodoium chicken broth, put in pot, add feista frozen veggies, some parmesan cheese, some herbs, a little wedge of onion, cook for about 20 minutes, brown sausages and cut into small pieces- half moon shape, add to hot soup, continue to cook, add some orzo and cooked meat tortellini. Cook about 10 minutes more, serve with some bread. YUM!

Hope I gave you some ideas.

oooooooooh baked cauliflower...how are you making that????

I take fresh cauliflower and break it into pieces. Put it in a bag with some oil and Mrs. Dash, shake it around so the cauliflower is coated with the spices. Dump it out onto a non stick baking sheet and bake 30-40 (check it at 30 mins to see if thats how you like it)minutes on 350.

I made chicken cordon bleu last night and it was amazing. Chicken cutlet with 1 thin piece of smoked ham and a 1 inch cube of a melting swiss or lorraine swiss....coat in egg and breadcrumbs...bake for 20 minutes....it really came out great. Had a side of broccoli.

Tonight is chinese...steamed shrimp with veggies and a side of brown sauce...and soup to start!

You guys are so creative. I usually eat whatever DH makes - meat and veggie.

I'll make pork loin with apple cranberry chutney for my DH and I'll have it with chicken.

We went apple picking last weekend so I'm trying to incorporate it into a lot this week!
