YUMMY RECIPES ???
I just made one of my favorite QUICK dishes, so i thought i'd share it and maybe swap some more recipes here...like we've done in the past...
my yummy recipe is...
STUFFED TOMATOES
( I make it 'by eye' so my measurements may be vague or a bit 'off', but play it by ear and throw in more if anything you want!)
All you need is
One packet of Ground Turkey (healthier option!)
One packet of frozen chopped spinach
1 egg
Handful of bredcrumbs
Minced garlic (if you want!)
1-2 cups of rice
add anything you can think of
MIX THIS ALL UP MIX MIX MIX with your hands.
(yes, rice goes in raw)
This should stuff a good 15 tomatoes. I only stuffed 10 and made meatloaf with the rest.
GUT the tomatoes, leaving the CAP in one piece, so you can close them up after stuffing them (kinda like a pumpkin!). Leave the tomato GUTS in a separate dish, valuable stuff !) Add some of it to the MIX, too much will make it too watery, add as much as you feel comfy adding. It also helps because it makes the MIX moist, and will cook the rice better.
Put your stuffed tomatoes in the oven for about an hour (we had to use the toaster oven, so it took a good 90 minutes).
With extra 'tomato guts' you can:
-Use it for soup, add water and noodles and YUMM!
or
-Heat it up, throw some pecorino romano and season as you wish, and use it as a sauce YUMM YUMM !!

That sounds delicious - I will have to try it. I just thought I would mention something I tried a while ago. I was looking for a new way to make vegetables and I read somewhere to dip them in lite Italian dressing and then in breadcrumbs. Bake at 450 until brown. I did it with cauliflower and onions and it was delicious. My husband who hates cauliflower loved it. You could also use zucchini or whatever you have. Healthier than frying in oil, but very tasty.Welcome New Vendors
