We are trying to save money and chicken thighs are on sale. Do you girls have any good recipies? We are also trying to stay on the healthy side. I am open to anything crock pot, not crock pot, spicy anything. Thanks!

Re: Dinner Help: Chicken thighs

I dont know if I am too late. But I always marinate chicken with fat free or light italian dressing, a sprinkle of salt, garlic powder and throw it in the over. But if you want something amazing!

On the bbq - buy boneless & skinless chicken thighs

marinade in the light/fat free italian dressing (the longer the better) and cook on the grill. I have never tasted anything that delicious and so easy!!!

Enjoy!

Re: Dinner Help: Chicken thighs

you can roast them in the oven with a few spice on them (rosemary, oregano, salt, pepper) and olive oil. or use lemon juice!

Re: Dinner Help: Chicken thighs

i marinade them in Maple Grove Fat Free Balsamic Vinaigrette and put a little EVOO in the pan and cook them that way. my hubs loves it.

You can also bake your chicken with salt pepper and if you get one of the mixed veggies in sauce (green giant has them) and dump it over your chicken when its half way cooked its pretty good.

I also put chicken thighs in my spaghetti and make it like a chicken Marsala instead of Marsala sauce i use tomato sauce.
