Mama's Pasta Fagiole(I got this from Dom Deluise's Cookbook, 'Eat This, It Will Make you Feel Better.')
Ingredients:
2 garlic cloves, minced
2 tablespoons olive oil
1 8-ounce can tomato sauce
3/4 cup water
1 16-ounce can cannellini beans
1/2 pound ditalini or elbow macaroni, cooked al dente
1/4 cup chopped, fresh parsley for garnish
Freshly grated Parmesan cheese to taste for garnish
1/2 teaspoon hot pepper flakes (optional)
Recipe:
In sauce pan, fry garlic gently in oil until golden brown. Add tomato sauce and water; simmer for 10 minutes. Add beans, cook 5 minutes more.
Add ditalini or elbow macaroni; stir gently, continue to simmer until flavors have assimilated. If it gets too thick, add a little more water. Sprinkle with parsley, grated cheese and hot pepper flakes, if desired.
Serve immediately, or pasta will absorb all the liquid.
Yield: serves 4.

Spicy Sausage and Rice CasseroleIngredients
28 ounces fresh ground spicy pork sausage
1 cup uncooked long-grain rice
1 slice onion, diced
3 cloves garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (28 ounce) can whole peeled tomatoes, crushed
1 cup chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a skillet, brown sausage and drain grease. Stir in rice, onion, garlic and peppers. Cook 5 minutes. Stir in tomatoes, chicken broth, salt, pepper and cayenne pepper. Pour into 9x13 inch pan.
Bake for 1 hour or until rice is tender and most of the liquid is absorbed.
It's so easy and tasty! I love to serve w/ sour cream on top. Yum!

Oreo Balls- One of my friend's told me about these.... They're delish
Needed:
1 Package of Oreos
1 Bar of Cream cheese
Melting chocolate or candy melts
Blender
Take the oreos and blend them until they are powder (the cream disappears into the crumbs, so you don't have to scoop that out). Personally I would blend, 4-5 oreos at a time, and dump the powder into a large bowl - continue through the whole box.
Combine the cream cheese and oreo powder until fulled blended and combined.
Roll out small balls from the mixture and place them on a cookie sheet.
Put the sheet into the freezer for 10 - 15 or the fridge for 30 min, so they are nice and cold.
While you are waiting melt the chocolate - dip each ball into the chocolate, let set, and eat!!
To store - keep them in an airtight container in the frige. The amt. varies depending on the size of your balls

so im in the process of cooking the sweet and sour meatballs and the buffalo chicken pasta and it smells OUTRAGEOUS..i cant wait to eat some but have to wait for hubby and some of the guys to get here

ITA 100% my friend from work made some and when I tried one it was like a yumminess explosion in my mouth. I asked her 'where did u buy these truffles?' and she told me her fiancé actually made them. When she gave me the recipe, I couldn't believe it requires only 3 ingredients and it's super easy to prepare!!!

Here are a few of my favorites and favorites that I usually get asked to make:Cheesy Spinach & Artechoke Dip
(found it in a magazine, but I don't remember which one)
1 can (14oz) artechoke hearts, finely chopped
1 pkg. (10oz) frozen chopped spinach, thawed and drained
3/4 cup grated parm. cheese (I like pecorino romano)
3/4 cup mayo
3/4 cup shredded mozzarella
1/2 tsp. garlic powder
Preheat oven to 350 degrees
Mix in a large bowl all ingredients until well mixed
Spoon into 9' pie plate
Bake 20 mins or until heated through - serve with crackers or pita chips
**I make this the night before and reheat it...I like it better that way**
Monterey Chicken
(online - not sure which site)
4 boneless chicken breasts
2 tablespoons BBQ sauce
Bacon
1/2 cup monterey jack cheese
1. Pound chicken breasts until somewhat flattened and season with salt and pepper
2. Spray cooking spray in a nonstick skillet
3. Cook chicken breasts for 6 - 8 mins on one side, turn over and cook 6 - 8mins longer until no longer pink
4. Top chicken breasts with bbq sauce, bacon and cheese
5. broil chicken in over until cheese is melted

And now on to dessert....On the back of the Hershey's dark chocolate chips, but I changed it just a little...
Decadent Truffle Bottom Chocolate Cream Pie
1 deep dish graham cracker crust
2 cups mini marshmallows
1/2 cup milk
1 bag Hershey's dark chocolate chips
1 cup heavy whipping cream
1 tub of Cool whip
Chocolate shavings (optional)
1. Place marshmallows and milk into a microwave bowl - microwave on 50% for 1 minute & stir. if neceesary, microwave at 50% an additional 30 seconds at a time, stirring after each heating, until the marshmallows are melted and mixture is smooth.
2. Add chocolate chips to mashmallow mixture, stir well until metled and mixture is smooth. If necessary, microwave at 50% an additional 15 seconds at a time, stirring after each heating, just until chips are completely melted.
3. Spread 1 cup of the chocolate mixture over the bottom of the crust. Cool the remaining mixture to room temperature.
4. Beat whipping cream until stiff - gradually blend into chocolate mixture, combining thorouhgly. Spread over chcocolate layer in crust. Cover, refrigerate 4 to 6 hours or until well chilled. Top with the cool whip and top with chocolate shavings if desired.
SOOOOOOOOOOOO GOOD AND CHOCOLATELY!!!! Mmmmmmmmmm....yum!

Grandma's Chicken Soup with Rice(this is from my father's mother)
1 6oz can of tomato sauce
Water
2 packages of Chicken Broth
1 package of chicken parts (legs/thighs)
1 onion
celery
salt
carrots
Rice
Place the chicken parts in a dutch oven (I like to make a lot and have left overs throughout the week). I try to get the chicken parts that have about 5-6 pieces in each package...not a whole lot. Trim off the skin if you desire to.
Peel the onion and place the whole onion in the dutch oven. Cut up as many carrots as you want in the soup (I usually buy the small carrots and make half a bag). Clean and cut up the celery, as much as you want in the soup as well. I try to do an even amount of carrots and celery.
Pour in the can of tomato sauce. Pour in 2 packages of chicken broth. If there is room left in the dutch oven, just keep adding water to the tomato can until the dutch oven is about 1 - 1 1/2 inches from the top. Add salt (I usually make a circular motion to the center of the pot - you want to be able to taste the salt but not over do it).
You can add other spices if you want. DH likes to add things like oregano and Italian spices but Grandma never did.
Make rice instructions as on packet.
Serve with grated cheese on top...
I'M MAKING THIS TONIGHT ACTUALLY AND I CANNOT WAIT!!!!

I notebooked this from a 2010 bride, and once I tried it, I was hooked! I made a few variations to it, so here's my version.1/2 box of Whole Wheat Pasta
1 can of Campbell's Cheese Soup
1 can-size amount of Milk
1/2 cup of Water
2 tsp of Butter (melted)
1/2 cup of Panko Bread Crumbs
1/2 cup of shredded Cheddar Cheese
In a casserole dish(the kind that can go in the oven & microwave, like pyrex) pour in the cheese soup and the milk, and microwave for 3 minutes until the cheese has melted.
Mix in the water and pasta until the pasta is completely covered by the cheesy mixture. Microwave again for 8 minutes.
In a separate bowl, mix in the bread crumbs and melted butter.
Once the pasta/cheesy concoction is done, add whatever seasonings you like (I put in some basil, garlic, and pepper), and sprinkle on the breadcrumbs.
Sprinkle the shredded cheddar cheese over the breadcrumbs, and bake in the oven on 400 degrees for 20 minutes.
*To make a meal out of it, I usually throw in some precooked meatballs, precooked ground turkey, or browned chicken(cut up into 1 inch pieces), and some peas. There is really so many things you can do to tweak this to your liking.*

(seriously the BEST pepper steak EVER)
(A friend's family recipe)
1 lb skirt steak
1 can 8oz tomato sauce
1 green pepper
1 red pepper
1 onion
Rice
Teriaki sauce
Worchester sauce
Garlic powder
Salt and pepper
In a pot place cut skirt steak olive oil and garlic powder salt and pepper on meat. Brown meat
Once meat is brown put 1 cup teriaki sauce 5 shakes of worchester sauce and can of tomato sauce and mix with meat. Then put cut peppers and onions. Cook until peppers are soft. Serve over rice

M & M choco cookies1 1/2 cups butter
2 cups white sugar
2 eggs
1 tsp vanilla extract
2 cups m & ms
2 cups flour
3/4 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1- Preheat oven to 350
2- Mix together butter and sugar until light and fluffy. Stir in eggs and vanilla. In separate bowl, sift together flour, cocoa, baking soda and salt. Stir it into creamed mixture. Lastly, add m & m.
3- Drop by tbsp onto cookie sheet. Bake 8 to 10 minutes.

Chipotle's 'Skinny' Cilantro Lime Rice(Skinny taste)
I LOVEEEEEEEEEEEEEEE THIS RECIPE!!!!!!!
1 cup extra long grain rice or basmati rice
1/2 lime, juice of
2 cups water
1 tsp salt
3 tbsp fresh chopped cilantro
3 tsp vegetable oil
In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off flame and keep covered an additional 5 minute.
In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.
It tastes SOOOO GOOD!!!!

1) Obtain tortilla instant corn flour such as Maseca and mix with water until its consistency is such that the 'masa' (dough) does not stick to your hands.
(You can find Maseca in the Internationals foods in hte supermarkets... or in a Hispanic Supermarket/deli)
2) You can Use refried beans and/or Mozzarella (I always used the Low Fat one) If you are using beans and cheese, Mix until the consistency is similar to the 'masa' prepared in step 1.
3) Take the 'masa' in your hands and make a ball about two inches in diameter. Once you finish, make a hole with your fingers, take some refriend beans and/or cheese mix (from step 2) and fill the hole with it.
4)Cover the hole with the masa and flatten by using your hands in a clapping motion. This takes practice but the goal is to make a disc.
5) Once you are done, place the pupusa on a preheated flat iron skillet. Leave it there until each side is cooked by noticing the dark spots (you need to flip the pupusa).
6) Sit down and enjoy your pupusa.
I usually eat my pupusas with Salsa... BUT not the MExican Salsa...
Just BLEND couple of tomatoes..... with a BIT of water... Then put it into a pan to boil and put a little bit of salt or Adobo...
and DELICIOSO!!!
OHH AND FOR THE RECORD.. We dont eat Pupusas with FORKS/KNIFE... It's sort of 'disrespectful' if you are Salvadorian to do so...
