super easy baked mac-n-cheese

okay, so i tried a new recipe last night. since i was feeling sick, wanted comfort food, but didnt feel like working hard to cook.

so here it is...it came out yummy! and it was almost too-easy!


1 can Campbell cheese soup
Supposed to put 1 can-size amount of fatfree milk, but we ran out of milk
So I used low-sodium veggie broth instead (the milk version will probably be creamier and I plan to try it next!)

Mix the 2 together and put in a casserole dish (the kind that can go in microwave and in oven)
Put in microwave, covered, for 3.5 minutes
Take out and stir (I had to use a whisk…it might be easier w the milk version)

Then put in a half box (about 2 cups or 8oz.) of whole wheat pasta. I used mini penne since that what I had available.
Mix it up to make sure all the pasta is covered by the cheesy mixture
Cover container and put back in microwave
Cook for 8 minutes

Take it out. Add whatever seasonings you like. I wanted something with a kick, so I added Cajun spice (lots of it!), some cayenne pepper, and some black pepper.
Mix it up.
Add a layer of cheese on top
In a separate bowl mix about 1 tbls of breadrumbs with 2 tsp of butter…then but that on top

Pop in over on 400’ for 20 minutes

It was seriously the easiest mac n cheese I ever made (didn’t even need to wait for the water to boil!! LOL)

Cant wait to try it with the milk. Im sure it will be yummier.

you just poor the box of noodles in? uncooked?

yup. i told ya, almost too easy!

only 1/2 box...as long as they are all covered by the cheesy mixture, they cook in the microwave for the next 8 minutes

when i took it out, they still werent cooked 100%, but then after the 20 minutes in the oven, it came out perfect!

hm.

i bet its even better if you toss in some broccoli bits in there.

yeah. im sure it would be fabulous really doctored-up.

i was feelign crappy yesterday, and i wasnt even sure how it was gonna turn out. so i didnt want to be adventurous

but i will def. be trying this again. i want to get the cute little pasta shapes too!

and DH really had no clue this was microwave made! haha

if you get the kitchen/microwave area alone for 15 minutes before putting it in the oven, it should score extra points! hhehe

Craziness!

I didn't have chocolate ice cream for the first 18 or so years of my life and DH won't believe it! I am a vanilla/strawberry girl....I'd rather pass on dessert than have chocolate ice cream...not my thing! I've obvi tried it by now...but i refused as a kid.

This looks so easy and I LOVE baked mac and cheese...but my microwave is not big enough for pans to go in - I can make a smaller size?

i used one of those round corningware casserole dishes and it worked fine

but if not, the goal is to have teh cheesy mixture cover the noodles....i think as long as that is happening you should be okay....but im not really sure....
