I've put together a list of must-take photos but now what. Who do I give the list to and how do they keep track of which photos have been taken?

You need to discuss this with your photographer. The way I work, it's hard to work from a list because it get's in the way of our natural flow. Best way would be give the list to best man or maid of honor to check off and alert the photographer to any that might be missed. Naturally, discuss any special photos that might not normally be taken before the wedding.

Excellent and very important question. All photographers handle this in many different ways.
You must speak with the photographers actually photographing your wedding directly. In our thorough and detailed planning sessions,this is one of many important concerns of both bride and groom and photographers doing the wedding. You don't want important memories missed, but you also don't want the timing of the day to interupt the fun and joy of the wedding day.
Plan carefully, this is the most choreographed day of your lives....plan it right.
